SWEET AROMATIZED WINE

Aromatized Sweet Wine based on Barbera is a distinctive and characterful wine that combines Piedmontese tradition with the art of aromatization. Made from 100% Barbera grapes, harvested during the first ten days of October, it is a unique product that enhances the structure and personality of the grape variety through a carefully crafted production process.

After harvest, the grapes undergo a drying process on special racks for 60 to 70 days, depending on the vintage. This step concentrates the fruit’s sugars, aromas, and structure. Vinification is carried out as a white wine, with the must separated from the skins through manual pressing, followed by a slow and extended fermentation lasting approximately 25 to 30 days, contributing to the wine’s complexity and aromatic intensity.

In the glass, it displays a deep red color with orange highlights, reflecting its concentration and evolution. The bouquet is intriguing and complex, featuring aromas of herbs, spices, and roots, highlighted by the distinctive bittersweet note of Calisaya cinchona bark, an ingredient used in the recipe to enhance the wine’s character. Elegant hints of star anise add further depth and personality to the aromatic profile.

On the palate, it is smooth, balanced, and enveloping, with a pleasant freshness and subtle citrus nuances that create a harmonious and persistent finish.

Thanks to its versatility, it is perfect as a digestif, while also pairing beautifully with dark chocolate and cocoa-based desserts. It can also be enjoyed as an alternative aperitif, perhaps served over ice to create an original and surprising spritz-style drink.

For the best tasting experience, serve at 12–15°C (54–59°F) to fully appreciate its aromas and structure.
